Basil Baked Chicken
Boneless, skinless chicken breasts - 8 (2.5 lbs)
Low-fat yogurt - 3/4 cup
Cornstarch - 2 tsp
Bread crumbs - 1 cup
Fresh basil - 1/2 cup, chopped
Grated parmesan cheese - 2 tb
Preheat oven to 375 degrees F.
Place the chicken breasts side by side in a baking dish.
Mix lowfat yogurt, basil and starch. Spread over the chicken.
Sprinkle the bread crumbs and parmesan cheese over the chicken.
Bake the chicken at 375 degrees F for 30-40 minutes, until the chicken is cooked.

Sounds good but in our heat I don't turn the overn on. Well since we got the microwave I use it more. Maybe this could be done in it.
Happy belated birthday. Any suggestions on what to use other than basil? I hate basil. With a purple passion...
Sounds absolutely delicious -- and simple, too. I think I'll make this ... and I *love* basil, especially fresh!
