I just posted this new card in my Etsy shop. This is so easy - wish I'd done it long ago, just like people told me to. I even launched my new Pine Tree Designs website yesterday. Even though I have more stuff to post in my Etsy shop, I decided to just do it, it was time.

I say that only because for the last couple of years I've been all been-there-done-that about cooking. I try to deny it coincided with Simon not being home much, even before he moved out - but that has to be a factor. Not that we would eat together all that much anymore but he was constantly whining, "Why is there no food in this house??" when clearly there was. Remove that pressure and I'm all about simple meals with as little time spent in the kitchen as possible. Why cook when I can stitch, I ask you?
Monday night I made Chococonut Chip Cookies that served two purposes. One was for a birthday at work (along with my standard issue brownies) and the other is they will go with the meal I'm taking to Kim & her family this week. (My friend with cancer had surgery a couple of weeks ago).
Last night I made Chicken Tortilla Soup for Dad to fulfill my third of three soups for that I gave him as a Christmas present. (Gretchen gave him 3 batches of cookies and he gave each of us 3 Crockpot meals.) Steve and I had the soup for dinner, and it's quite good!
Tonight I'll make a double batch of macaroni & cheese so we'll have some for dinner and I'll drop off the rest at Kim's house on my way to work Thursday morning, with ham steaks, broccoli, fruit and the aforementioned cookies.
There. That ought to hold me for a while.
