Wednesday, December 31, 2003 Simon called me at work yesterday, "Mom! I can eat!" By the time I got home, both kitchen sinks were piled high with dishes. Guess he went on a bit of a feeding frenzy. Judging by the evidence I saw, I know he ate (chunky) soup, leftover pizza, French fries - not sure what else. We had leftover ham and scalloped potatoes and he did pretty well with that. Actually I had a large tossed salad with bits of ham on it. I'm not overly fond of scalloped potatoes or maybe I'm just burned out on them. Plus he invited Gershum and Paul over to spend the night. My boy is back in the saddle again. Smiling and laughing and everything.
My friend Kathy asked me to make a baby card for her so last night I made the three following cards for her to choose from. I left them on her desk this morning with little price tags attached. She bought all 3! I told her, heck, if I'd known she was in a buying mood, I would have made more!
I finally got to use those tiny diaper pins I've been dying to try! And the quilty stamps on the bottom card are new too. That large quilt stamp is actually 4 blocks by 4 blocks. I see tons of possibilities in that thing. (The blue border on the baby part of the card looks perfectly even in real life; not sure why it scanned like this, she says defensively.)
We had Kuldooneys for dinner tonight. This is a recipe from Jennifer, from her husband's family from way back. I asked her how to spell it and she didn't know because she'd never seen it written down. Joe's mother showed her and now she's passing it on to her daughters-in-law. They are kind of like pierogies. You make dough out of flour, water, egg and salt. Roll it out as thin as you can (which I found wasn't easy, this is not the light yeasty bread dough I'm used to working with). Place about a teaspoon or so of raw ground beef on the dough, fold it over and seal it all around with a fork. Repeat until the dough is used up. Boil them until they float and serve them with sautéed bacon and onions over the top. I actually saw Jennifer flinch when I told her I was going to use ground turkey and turkey bacon. That's what I had and that's what we eat. We all liked them a lot. Steve ate his with Hertz hot sauce on them. (Bet Jennifer flinches again when she reads that.) We also had shrimp cocktail, at Simon's request. Gershum stayed for dinner but he's gone now. So it's just another night here, really. I know I won't stay up until midnight. Heck, I already power napped on the couch after reading the newspaper! I really can't sleep past 7:00 no matter what time I go to bed, so there's really no point in staying up late. I remember the first time Simon stayed up to watch the ball drop on TV. "That's it? That's all there is?" Yep. Like I told people at work, it will turn into 2004 whether I'm awake or not. Tomorrow is a 100% at home day. I'm going to play it by ear as to what I do. I know I'll take the Christmas tree and decorations down. I had been feeling in the organizing mood and thought I'd reorganize the basement, but after making those cards last night, I'm feeling rather stampish at the moment. I know it will be a wonderful Stefani Day, no matter what I end up doing. Yay for days off with no commitments! Best wishes to everyone for 2004!
